Recipe of the Week - Light Lemon Chicken

Light Lemon Chicken


Serving Size: 1 Chicken Breast with Sauce

Yield: 4 Servings


Ingredients:


1½ pounds chicken breast, skinned and fat removed (4 chicken breasts)

½ cup fresh lemon juice

2 tbsps white wine vinegar

½ cup fresh sliced lemon peel

1 tbsp fresh oregano, chopped or 1 tsp dried oregano, crushed

1 medium onion, sliced

¼ tsp salt

Black pepper to taste

½ tsp paprika


Directions:


Place chicken in 13" x 9" x 2" glass baking dish. In a small bowl, mix lemon juice, vinegar, lemon peel, oregano and onions. Pour mixture over chicken. Cover baking dish with plastic wrap and allow to marinate in refrigerator several hours or overnight, turning occasionally. Season chicken with salt, pepper and paprika. Cover with foil and bake at 325ºF for 30 minutes. Uncover and bake 30 minutes more or until done.
